Ingredients:
•1 Bag Arugula Leaves
•2 Tbsp Olive Oil
•1 Tbsp Balsamic Vinegar
•½ Tsp Salt
•1 Tsp Fresh Black Pepper (Ground)
•½ of Seedless Watermelon (Diced)
•¼ Cup Pecan Halves
Dressing:
Mix together oil, pepper, salt and vinegar.
Salad:
Add the prepared dressing, half the watermelon pieces and half the pecan halves to the arugula leaves and toss them together to mix.
Garnish:
Once the salad is ready, garnish with left over pecan halves and watermelon pieces. Feel free to add goat cheese crumbles if you like.
